  • 1 medium broccoli head
  • 1 onion
  • 1 dessert spoon (about 2 tsp) salt
  • 2 tablespoons vegetable oil
  • 1 package heavy cream
  • 1 teaspoon Aleppo pepper flakes
  • ½ teaspoon black pepper

How to Make Creamy Broccoli Soup

Wash 1 medium broccoli head and place it in a pot. Add water to reach halfway up the broccoli, then quarter 1 onion and add it to the pot. Cut 1 large potato into five pieces and add it as well. Add 1 dessert spoon (about 2 tsp) of salt, 1 teaspoon of black pepper, and 2 tablespoons of vegetable oil, then boil until tender.

Once everything is cooked, blend all the ingredients directly in the pot with an immersion blender until smooth and creamy.

In a small saucepan, melt 2 tablespoons of butter together with 2 tablespoons of vegetable oil and 1 dessert spoon (about 2 tsp) of Aleppo pepper flakes. Drizzle this mixture over the bowls when serving.
