How to Make Beef Quesadilla
In a cast iron skillet, sauté 1 medium yellow onion, julienned, in 1/2 tea glass (about 50 ml / 3 tbsp + 1 tsp) vegetable oil for a few minutes. Add 1 dessert spoon (about 2 tsp) granulated sugar and 2 tablespoons vinegar, and caramelize slightly. Add 1 long green pepper and 2 red bell peppers, both halved lengthwise and julienned, and continue to sauté. Add 300 g (about 10.5 oz) julienned beef steak and stir quickly. Season with 1 teaspoon salt and 1 teaspoon black pepper. Continue to sauté everything over high heat, then remove from the stove.
Place one tortilla in a non-stick skillet. Add 2 tablespoons of the beef filling, then 1 tablespoon each of the shredded cheddar and kaşar cheese, and cover with a second tortilla. Using a wide serving plate, flip the quesadilla and cook over medium heat until both sides are golden. Repeat the same process with the remaining tortillas and filling. Slice with a sharp knife and serve immediately while hot.
