Ingredients for Potato and Spinach Quiche (Patatesli Ispanaklı Kiş)

  • 250 g spinach
  • 3 potatoes
  • 1 onion
  • 1 tea glass of milk (about 100 ml / 1/3 cup + 1 tbsp)
  • 2 water glasses of flour (about 200 ml / 3/4 cup + 1 tbsp each)
  • 5 tablespoons butter
  • 2 eggs
  • 1–2 tablespoons water
  • Grated kaşar cheese (Turkish semi-hard cheese, similar to mild cheddar)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Chickpeas (for blind baking)

How to Make Potato and Spinach Quiche (Patatesli Ispanaklı Kiş)

  1. In a bowl, knead together 2 water glasses (about 400 ml / 1¾ cups) of flour, 5 tablespoons of butter, 2 eggs, 1–2 tablespoons of water, and 1 teaspoon of salt. Cover the dough and refrigerate for 20 minutes. Press the dough into a tart pan, covering the sides as well. Cover the dough with parchment paper and add a handful of chickpeas on top to prevent it from puffing up. Bake in a preheated oven at 180°C (350°F) for 25 minutes.
  2. Meanwhile, in a separate pan, sauté the finely diced onion until translucent. Add 250 g of washed and thinly sliced spinach and continue to sauté. Sprinkle with 1/2 teaspoon of salt, toss to combine, and remove from heat.
  3. In a bowl, combine 3 boiled and mashed potatoes with 1 tea glass (about 100 ml / 1/3 cup + 1 tbsp) of milk. Season with salt and black pepper. Grate in as much kaşar cheese as desired. Press the sautéed spinach with a spoon to drain any excess liquid, then add it to the potato mixture. Mix all ingredients together.
  4. Spread the prepared filling evenly inside the baked quiche crust. Bake at 180°C (350°F) until the top is golden. Don't forget to sprinkle grated kaşar cheese on top 5 minutes before it's done. Enjoy your meal!

Pro Tip

Set aside the chickpeas used for blind baking in this or any other quiche recipe. Once cooled, you can bag them and store them. You can reuse them the next time you make quiche — in fact, you can use them many times over!
