Ingredients for Yayla Çorbası (Turkish Yogurt Soup)
- 1/2 water glass (about 200 ml / 3/4 cup + 1 tbsp) rice
- 3 water glasses (about 600 ml / 2 1/2 cups) water
- 1.5 tablespoons flour
- 2 tablespoons yogurt
- 1 teaspoon salt
- 1 tablespoon vegetable oil
- 1 tablespoon butter
- 1 dessert spoon (about 2 tsp) dried mint
How to Make Yayla Çorbası (Turkish Yogurt Soup)
- Pick over and rinse the 1/2 water glass of rice, then place it in a pot. Add 3 water glasses of water and boil over medium heat until the rice is tender.
- In a bowl, combine 1.5 tablespoons of flour and 2 tablespoons of yogurt and mix well. Add approximately 5–6 tablespoons of the hot cooking liquid from the rice and stir, then transfer this yogurt mixture into the pot. Begin cooking over medium heat, stirring continuously. Once it comes to a boil, reduce to low heat, add 1 teaspoon of salt, and bring to one more boil. (If the soup becomes too thick, you can thin it out by adding some water.)
- In a pan, melt 1 tablespoon of vegetable oil together with 1 tablespoon of butter. Add 1 dessert spoon of dried mint and cook, stirring, for about 1 minute. Pour the prepared sauce into the soup and stir to combine.
