Ingredients for Çökertme Kebabı (Turkish Beef Kebab with Fries and Garlic Yogurt)
- For the meat marinade:
- 3 slices beef steak or tenderloin (about 500 g / about 1 lb)
- 1 small dry onion
- 1 clove garlic
- 2 dessert spoons (about 2 tsp each) grape vinegar
- 3 tablespoons olive oil
- 1 dessert spoon (about 2 tsp) oregano
- 1/2 teaspoon black pepper
- For the potatoes:
- 3 medium potatoes
- 1.5 water glasses (about 200 ml / 3/4 cup + 1 tbsp each) vegetable oil (for frying)
- For the tomato sauce:
- 3 medium tomatoes, grated
- 1 dessert spoon (about 2 tsp) tomato paste (domates salçası)
- 2 tablespoons olive oil
- 1/2 dessert spoon (about 1 tsp) salt
- 1 cube sugar
How to Make Çökertme Kebabı (Turkish Beef Kebab with Fries and Garlic Yogurt)
Cut the beef steak or tenderloin slices into long, thin strips. For the meat marinade: grate 1 dry onion and squeeze the juice from 1 clove of garlic into a separate bowl. Add 2 dessert spoons of grape vinegar, 1/2 teaspoon of black pepper, 1 dessert spoon of oregano, and 3 tablespoons of olive oil, then mix well. Add the meat strips, cover with plastic wrap, and let rest for about 30 minutes.
For the tomato sauce: In a small saucepan, combine 2 tablespoons of olive oil, 3 grated tomatoes, 1 cube of sugar, and 1/2 dessert spoon of salt. Cook until the liquid has reduced.
For the matchstick fries: Peel 3 potatoes and cut them into matchstick-sized pieces. Fry them in hot deep vegetable oil in a small saucepan until golden and crispy.
To cook the meat, heat a small amount of vegetable oil in a cast iron pan if possible. Cook the marinated meat over high heat. Once cooked, sprinkle with salt and remove from the heat.
To serve, layer onto a serving plate in order: crispy matchstick fries, whipped garlic yogurt, tomato sauce, and sautéed meat strips.
