How to Make Sea Bean Salad (Deniz Börülcesi Salatası)

We thoroughly wash 1 bunch of sea beans and boil them in a pot. After boiling, we drain them and wait for them to cool slightly. Once warm, we trim them by pulling from their stems. We place them on a serving plate and pour over a dressing made from 1 crushed clove of garlic mixed with 1 tea glass of olive oil and 1 dessert spoon of lemon juice. Our mineral-packed salad is ready — enjoy!

About This Recipe

Sea beans, a member of the succulent family, grow in coastal areas, marshes, and salt lakes. Due to their love of highly saline environments, they are known as sea beans. Also commonly called sea asparagus, sea beans are widely cultivated in North America, South Asia, Europe, and South Africa. In our country, they are produced in the Aegean and Mediterranean regions.

Rich in minerals, sea beans are especially high in sodium, iodine, magnesium, iron, vitamins A, B12, and C, and dietary fiber. Because they grow in saltwater, they contain the purest forms of all these minerals. They are also ranked among the top foods in the medically beneficial category. Sea beans could nourish millions of people on their own, yet unfortunately we cannot say that their full potential has been realized.

A sodium champion, a betaine powerhouse…
With their exceptionally high sodium content, sea beans help maintain the water balance in our bodies. Muscles and the nervous system sustain their activities through electrical signals from the brain. Nourishing cells with sodium means the central nervous system can function flawlessly. For this reason, sea beans are the ideal food for obtaining sodium and chloride (salt) through natural means. Betaine is a type of amino acid that fully supports the process of preparing our physiology for all conditions and events. In short, our bodies need betaine, and sea beans contain the highest amount of it. Their medicinal benefits have been known for centuries, but the presence of flavonoids — a powerful antioxidant found in sea beans — is only now being discovered. It is already widely known that antioxidants are active compounds in the fight against cancer.

We wanted to honor such an important nutrient in a way befitting its vitamins, just like our Asparagus Salad recipe; our Sea Bean Salad recipe brings an abundance of minerals to our table… Wishing everyone good health.
