Boil 250 g (about 8.8 oz) of cauliflower whole in salted water, then drain. Once cooled, mash with a fork.
In a bowl, combine 1 egg, 1 handful of chopped parsley, 1 finely chopped onion, 1 handful of chopped dill, 100 g (about 3.5 oz) of crumbled white cheese, 1/2 dessert spoon (about 1 tsp) of salt, black pepper, and 2 handfuls of cornmeal. Add the mashed cauliflower and enough flour, then knead together.
Using a spoon, drop the mixture into a hot oiled pan and fry the köfte until golden brown. After frying, place them on a paper towel to absorb any excess oil. Enjoy your meal...
Tips & Tricks
- If you don't squeeze out the cauliflower's moisture well, the köfte may fall apart.
- Adding too much cornmeal will make the köfte tough — add it little by little.
- For a lighter version, you can also bake the köfte in the oven or cook them in an air fryer.
- You can increase the amount of spices to suit your taste.
