Ingredients for Karnı Dilik (Sliced Stuffed Eggplant)

  • 6 eggplants
  • 300 g (about 10.5 oz) ground meat
  • 2 long green peppers
  • 1 tablespoon tomato paste (domates salçası)
  • 1 onion
  • 1 dessert spoon (about 2 tsp) salt
  • 1 teaspoon Aleppo pepper flakes
  • 1/2 teaspoon black pepper

How to Make Karnı Dilik (Sliced Stuffed Eggplant)

Wash the eggplants thoroughly and cut them lengthwise into slices. Place the sliced eggplants in a bowl, brush them with 1 tea glass (about 100 ml / 1/3 cup + 1 tbsp) of vegetable oil, arrange them on a lined baking tray, and roast in the oven at 200°C (390°F).

In a pan, sauté 1 finely diced onion and 2 long green peppers in 1/2 tea glass (about 50 ml) of vegetable oil. Add the ground meat and continue to sauté. Add 1 handful of chopped parsley, 1 tablespoon of tomato paste, 1 dessert spoon (about 2 tsp) of salt, 1 teaspoon of Aleppo pepper flakes, and 1/2 teaspoon of black pepper. Stir to combine, then add 1 tea glass (about 100 ml / 1/3 cup + 1 tbsp) of water and cook for 5 minutes.

Arrange the roasted eggplant slices in a glass baking dish. Spoon the prepared filling between the sliced eggplants. Bake in a preheated oven at 190°C (375°F) for 25 minutes.
