Ingredients for Butternut Squash and Celeriac Soup

  • 1 onion
  • 1 carrot
  • 1 tablespoon butter
  • 1 tablespoon vegetable oil
  • 300 g (about 10.5 oz) butternut squash
  • 1 celeriac

How to Make Butternut Squash and Celeriac Soup

In a pot, sauté 1 finely diced onion and 1 cubed carrot with 1 tablespoon of butter and 1 tablespoon of vegetable oil. Peel, wash, and cube 300 g of butternut squash, add it to the pot, and stir to combine. Add 1 small cubed celeriac and 2 chopped celery stalks. Pour in enough chicken stock to cover, then add 1 dessert spoon (about 2 tsp) of salt and 1 dessert spoon (about 2 tsp) of black pepper and cook until tender. Once cooked, stir in 1 package of cream (200 ml / about 3/4 cup), cook for a further 5 minutes, and serve garnished with parsley.

Cooking Tip

Once your soup is cooked, you can blend it with an immersion blender if desired.
