Ingredients for Kıymalı Pide (Turkish Flatbread with Ground Meat)

  • 300 g (about 10.5 oz) ground beef
  • 1 onion
  • 5 long green peppers (sivri biber)
  • 1/2 dessert spoon (about 1 tsp) salt
  • 1 teaspoon black pepper
  • 2 tablespoons vegetable oil
  • 1 water glass (about 200 ml / 3/4 cup + 1 tbsp) warm milk
  • 1 packet dry yeast
  • 3.5 water glasses (about 700 ml / 3 cups) flour
  • 1 tablespoon butter
  • 2 tablespoons vegetable oil
  • 1 egg

How to Make Kıymalı Pide (Turkish Flatbread with Ground Meat)

  • In a bowl, combine 300 g ground beef, 1 finely chopped onion, 5 long green peppers (seeded and finely chopped), 1/2 dessert spoon salt, 1 teaspoon black pepper, and 2 tablespoons vegetable oil. Knead the filling together.
  • Add 1 packet of dry yeast to 1 water glass (about 200 ml / 3/4 cup + 1 tbsp) of warm milk and let it bloom for about 5 minutes. Add 3.5 water glasses of flour, 1 tablespoon of butter, 2 tablespoons of vegetable oil, and 1 egg, then knead everything together.
  • Transfer the dough to a glass bowl greased with vegetable oil, cover with plastic wrap, and let it rest for 1 hour.

  • After 1 hour, transfer the dough to a floured surface, shape it into a long oval, and divide it into 6 equal pieces. Roll each piece out lengthwise on the work surface. (It will be easier if you first shape each piece into a long form by hand before rolling.) Place each rolled-out dough piece on a parchment-lined baking tray, add the prepared filling inside, fold both long sides over the filling (leaving a slight opening in the middle), pinch the ends together pressing with your fingers. Cover and let rest for 30 minutes.

  • After the resting period, bake the pide in a preheated oven at 200°C (390°F) until golden brown on both top and bottom. Once out of the oven, brush the tops with butter.
