Ingredients for Creamy Mixed Vegetable Quiche

  • 2 water glasses (about 200 ml / 3/4 cup + 1 tbsp each) flour
  • 5 tablespoons butter
  • 2 eggs
  • 1-2 tablespoons water
  • 1 teaspoon salt
  • 1 package cream (200 ml)
  • 1 small jar mixed vegetables (frozen vegetable medley)
  • 100 g kaşar cheese (Turkish semi-hard cheese, similar to mild cheddar)
  • Salt
  • Black pepper
  • Chickpeas (for blind baking)

How to Make Creamy Mixed Vegetable Quiche

  1. In a bowl, knead 2 water glasses of flour, 5 tablespoons of butter, 2 eggs, 1-2 tablespoons of water, and 1 teaspoon of salt together. Cover the dough and let it rest in the refrigerator for 20 minutes. Press the rested dough into a tart pan, making sure to cover the sides as well. Cover the dough with parchment paper and add some chickpeas on top of the paper to prevent it from puffing up. Bake in a preheated oven at 180°C (350°F) for 25 minutes.
  2. Meanwhile, in a pan, combine 1 package of cream (200 ml), 1 small jar of mixed vegetables (rinsed and drained), 100 g of grated kaşar cheese, salt, and black pepper, and bring to a brief simmer.
  3. Spread this mixture over the baked quiche crust. Bake at 180°C (350°F) until the top is golden. Don't forget to sprinkle 100 g of grated kaşar cheese on top 5 minutes before it's done. Enjoy!

Set aside the chickpeas used for blind baking in this or any other quiche recipe. Once cooled, you can bag and store them. You can reuse them the next time you make a quiche — in fact, you can use them many times over!
