Ingredients for Chickpea and Spinach Soup
- 1 onion
- ½ tea glass (about 50 ml / 3 tbsp + 1 tsp) vegetable oil
- 2 tablespoons flour
- 1 tablespoon salça (Turkish tomato/pepper paste)
- 1 water glass (about 200 ml / ¾ cup + 1 tbsp) chickpeas
- 10 spinach leaves
- ½ dessert spoon (about 1 tsp) salt
- ½ teaspoon Aleppo pepper flakes
- ½ teaspoon black pepper
How to Make Chickpea and Spinach Soup
Sauté 1 finely diced onion in ½ tea glass (about 50 ml / 3 tbsp + 1 tsp) of vegetable oil. Add 2 tablespoons of flour and continue to sauté for a little longer. Stir in 1 tablespoon of salça (Turkish tomato/pepper paste) and cook briefly. Fill the pot halfway with water and mix with a hand mixer. Once it comes to a boil, add 1 water glass (about 200 ml / ¾ cup + 1 tbsp) of boiled chickpeas and stir occasionally with a spoon. After 5 minutes, add 10 washed and finely chopped spinach leaves. Add ½ dessert spoon of salt, ½ teaspoon of Aleppo pepper flakes, and ½ teaspoon of black pepper, then simmer over low heat until the chickpeas and spinach are fully cooked. If your soup is too thick, you can add a little more water.
