Ingredients for Pinwheel Börek (Turkish Savory Pastry) with Soda
- 150 g white cheese (similar to feta)
- 1 handful parsley
- 1 egg white
- Half a water glass (about 200 ml / 3/4 cup + 1 tbsp) of yogurt
- Half a bottle of soda water
- 1 sheet yufka (thin Turkish phyllo-like dough)
- 1 egg yolk
- 3 tablespoons vegetable oil
How to Make Pinwheel Börek (Turkish Savory Pastry) with Soda
Crumble 150 g of white cheese and 1 handful of parsley together on a plate and mix well.
In a bowl, combine 1 egg white, half a water glass of yogurt, and half a bottle of soda water, then whisk together with a fork.
Lay 1 sheet of yufka flat on the counter and cut it into 4 equal pieces. Take one piece and gather it from the center, bunching it up. Drizzle the soda mixture we prepared over it. Place the cheese filling in the center of the bunched area. Fold the sides of the yufka over the cheese filling, then place it upside down on a baking tray lined with parchment paper. Repeat this process until all the yufka pieces are used up.
Whisk 1 egg yolk with 3 tablespoons of vegetable oil. Using a pastry brush, spread the mixture over the börek arranged on the tray. Bake in a preheated oven at 200°C (390°F) until the tops are golden brown.
