Ingredients for Tahini Walnut Bread

  • 1 water glass (about 200 ml / 3/4 cup + 1 tbsp) warm milk
  • 1 packet dry yeast
  • 2 dessert spoons + 1 water glass (about 200 ml / 3/4 cup + 1 tbsp) granulated sugar
  • 1 egg
  • 2 tablespoons butter
  • 1 water glass (about 200 ml / 3/4 cup + 1 tbsp) vegetable oil
  • 1 dessert spoon salt
  • Flour, as much as needed
  • 1 water glass (about 200 ml / 3/4 cup + 1 tbsp) tahini
  • 1 water glass (about 200 ml / 3/4 cup + 1 tbsp) crushed walnuts
  • 1 egg yolk

How to Make Tahini Walnut Bread

Pour 1 water glass of warm milk into a bowl. Add 1 packet of dry yeast and 2 dessert spoons of granulated sugar and stir. After letting it sit for 10 minutes, transfer it to another bowl. Add 1 egg, 2 tablespoons of butter, 1 water glass of vegetable oil, 1 dessert spoon of salt, and as much flour as needed, then knead. Cover and let it rise. In a separate bowl, mix 1 water glass of tahini with 1 water glass of granulated sugar. Sprinkle flour on the risen dough and roll it out into a thin, round shape. Spread the tahini mixture over the rolled-out dough and sprinkle 1 water glass of crushed walnuts on top. Starting from one end, roll it up into a log. Cut the rolled dough into 3-finger-width pieces and arrange them upright on a parchment-lined baking tray. (Place one piece in the center and press the remaining pieces around it.) Let it rise for another 15 minutes. Then brush with egg yolk and bake in a preheated oven at 180°C (350°F) for 25–30 minutes.

The walnut tree belongs to the Juglandaceae family. They can grow to an average height of 25 meters. The commercially valuable walnut variety is the J. Regia tree, which is native to Asia. Walnuts reach full ripeness especially in August and September. During this period, the thick green hull on the tree branches begins to crack open to reveal the light brown, hard-shelled walnut inside. Walnuts weigh approximately 10–15 grams, have a spherical shape, and contain an edible kernel that resembles two separate lobes of a brain. Yes, the part we consume is the kernel. This kernel is covered by a white, light-colored membrane. The oil extracted from the walnut kernel is known in medicine as a base oil and is used in aromatherapy.

Many vitamins and essential oils are found within walnuts. For this reason, they are an extremely beneficial food for human health. Experts state that eating 4–5 raw walnuts every day is recommended to protect against conditions such as Alzheimer's disease, cardiovascular disease, constipation, and digestive system disorders. It is known that approximately 90% of the phenols found in walnuts (tannins, phenolic acids, and flavonoids) are also present in human skin. The most beneficial part for our skin is the white membrane found on the outer layer of a fresh walnut. Although the taste of this membrane is somewhat bitter, consuming it is extremely beneficial. The vitamin E found in walnuts also has a positive effect on cardiovascular health, particularly in men.
