  • 3 slices butternut squash
  • 2.5 water glasses (about 200 ml / 3/4 cup + 1 tbsp each) sugar
  • 2 eggs
  • 1 water glass vegetable oil
  • 1 water glass milk
  • 3 water glasses flour
  • 1/2 water glass walnuts
  • 1 packet baking powder
  • 1 packet vanilla
  • 1 teaspoon cocoa

How to Make Butternut Squash Cake (Bal Kabaklı Kek)

  • Peel the 3 slices of butternut squash. Cut each one into 3 large pieces. Then cut each piece in half lengthwise.
  • In a pot, cook the squash with 1 water glass (filled leaving about a finger's width of space at the top) of granulated sugar.
  • Beat 2 eggs and 1.5 water glasses of granulated sugar with a mixer. Add 1 water glass of vegetable oil and 1 water glass of milk and beat again. Add 3 water glasses of flour, 1/2 water glass of crushed walnuts, 1 packet of baking powder, 1 packet of vanilla, and 1 teaspoon of cocoa, then beat to combine.
  • Pour half of the prepared mixture into a greased cake pan. Arrange the cooled squash pieces on top in a single layer, then pour the remaining mixture over them. Bake in a preheated oven at 170°C (340°F) and test for doneness with a toothpick. Enjoy!

Tips & Tricks

  • If you like, you can enrich the flavor of the cake with a pinch of cinnamon.
  • You can also add extra walnuts to give the cake additional texture and depth of flavor.
  • For serving, you can dust the top lightly with powdered sugar or serve with a scoop of vanilla ice cream.
