Beef Tortilla on a Tomato Bed (Enchilada-Style)

Ingredients for Beef Tortilla on a Tomato Bed (Enchilada-Style)

  • 2 slices beef steak
  • 3 tomatoes
  • 1 sugar cube
  • 1/2 dessert spoon (about 1 tsp) salt
  • 2 tablespoons vegetable oil
  • 1 dry onion
  • 2 red peppers
  • 1/2 tea glass (about 50 ml / 3 tbsp + 1 tsp) vegetable oil
  • 2 tablespoons grape vinegar
  • 1/2 dessert spoon (about 1 tsp) granulated sugar
  • 10 button mushrooms
  • 4 tortilla wraps
  • 100 g (about 3.5 oz) shredded kaşar cheese (Turkish semi-hard cheese, similar to mild cheddar)

How to Make Beef Tortilla on a Tomato Bed (Enchilada-Style)

Place 3 peeled and diced tomatoes into a sauce pot. Add 1 sugar cube, 1/2 dessert spoon (about 1 tsp) of salt, and 2 tablespoons of vegetable oil, cook briefly, then remove from heat.

In a skillet, sauté 1 julienned dry onion and 2 julienned red peppers in 1/2 tea glass (about 50 ml / 3 tbsp + 1 tsp) of vegetable oil for a few minutes. Add 2 tablespoons of grape vinegar and 1/2 dessert spoon (about 1 tsp) of granulated sugar, and sauté a little longer. Add 2 julienned beef steaks and stir to combine. Add 10 washed and halved button mushrooms and cook over high heat for a few minutes, then remove from heat. Divide the filling among 4 tortilla wraps and roll them up tightly.

Spread half of the prepared tomato sauce on the bottom of a glass baking dish and arrange the rolled tortillas on top. Pour the remaining tomato sauce over the tortillas and sprinkle with 100 g (about 3.5 oz) of shredded kaşar cheese. Bake in a 200°C (400°F) oven until the cheese is golden and bubbly.

Pro Tip

If you'd like to make a true Mexican-style Enchilada, feel free to make the tomato sauce as spicy as you like.
