- 1 zucchini
- 1 potato
- 1 onion
- Half a tea glass (about 50 ml / 3 tbsp) vegetable oil
- 1 tablespoon flour
- 1 package (200 ml) heavy cream
- Butter
- Aleppo pepper flakes
How to Make Zucchini Soup (Kabak Çorbası)
Into a bowl, grate 1 washed zucchini — ends trimmed, skin on. Grate 1 peeled potato on top.
In a soup pot, sauté 1 finely diced onion in half a tea glass (about 50 ml / 3 tbsp) of vegetable oil. Add the zucchini and potato and sauté for a few more minutes. Stir in 1 tablespoon of flour and mix a few times, then add enough water to fill more than halfway up the pot, stirring until the flour is fully dissolved. Once the zucchini and potato are cooked through, add 1 package of heavy cream and bring to one final boil. When serving, melt butter with Aleppo pepper flakes and drizzle over the top.
