Ingredients for Roasted Red Pepper and Potato Salad

  • 6 tablespoons yogurt
  • 2 tablespoons mayonnaise
  • 2 cloves garlic
  • 3 red peppers
  • 3 potatoes
  • ½ dessert spoon (about 1 tsp) salt

How to Make Roasted Red Pepper and Potato Salad

  1. In a bowl, mix 6 tablespoons of yogurt, 2 tablespoons of mayonnaise, and 2 crushed garlic cloves together.
  2. Roast 3 red peppers, peel and slice them thinly onto a serving plate, and cut 3 boiled potatoes into large cubes. Sprinkle with ½ dessert spoon (about 1 tsp) of salt, pour the prepared sauce over the top, and toss to combine.
