Ingredients for Eggplant with Red Pepper and Yogurt

  • 2 eggplants
  • 2 red peppers
  • 2 long green peppers (çarliston biber)
  • Half a tea glass (about 50 ml / 3 tbsp + 1 tsp) vegetable oil
  • 1 bowl strained yogurt (Greek yogurt consistency)
  • 1 large garlic clove

How to Make Eggplant with Red Pepper and Yogurt

Peel the 2 eggplants in a striped pattern and soak them in salted water for 10 minutes. After 10 minutes, rinse and pat dry. Dice the eggplants into cubes. Trim and roughly chop 2 red peppers and 2 long green peppers. Pour half a tea glass (about 50 ml / 3 tbsp + 1 tsp) of vegetable oil over them and toss to combine. Transfer to a baking tray lined with parchment paper and bake in a preheated oven at 200°C (390°F) until golden. (You may also fry them in oil if you prefer.)

Crush 1 large garlic clove and mix it into a bowl of strained yogurt. Place the roasted eggplant and peppers on a serving plate, pour the prepared yogurt over the top, stir to combine, and serve.
