- 2 eggplants
- 6 long green peppers (sivri biber)
- 2 zucchinis
- 2 red bell peppers
- 1.5 tea glasses (about 150 ml / 2/3 cup) vegetable oil
- 2 teaspoons salt
- 1 bowl yogurt
- 2 garlic cloves
How to Make Oven-Baked Vegetables with Yogurt (Yoğurtlu Fırında Kızartma)
Peel 2 eggplants in a striped (zebra) pattern and soak them in salted water for 10 minutes. Remove the eggplants from the water, squeeze out the excess moisture, and chop into large cubes. Chop 6 long green peppers, 2 peeled zucchinis, and 2 red bell peppers into large cubes as well. Drizzle 1.5 tea glasses (about 150 ml / 2/3 cup) of vegetable oil over the vegetables, toss to coat, then spread onto a baking tray lined with parchment paper and bake in a preheated oven at 200°C (400°F) until golden. Once the vegetables are cooked, sprinkle 2 teaspoons of salt over them.
Add 2 crushed garlic cloves to a bowl of yogurt. Transfer the roasted vegetables to a serving plate, pour the garlic yogurt over the top, and toss to combine. Enjoy!
