Ingredients for Cabbage Dolma (Lahana Dolması) — Stuffed Cabbage Rolls with Ground Meat

  • 300 g (about 10.5 oz) ground beef
  • 1 onion
  • Half a bunch of parsley
  • Half a water glass (about 200 ml / 3/4 cup + 1 tbsp) rice
  • 1 dessert spoon (about 2 tsp) dried mint
  • 1 dessert spoon (about 2 tsp) salt
  • 1 teaspoon black pepper
  • 1 dessert spoon (about 2 tsp) Aleppo pepper flakes
  • 1 tablespoon tomato paste (domates salçası)
  • Half a tea glass (about 100 ml / 1/3 cup + 1 tbsp) water
  • 1 small cabbage head (for stuffing)
  • 2 tablespoons margarine
  • 1 teaspoon salt

How to Make Cabbage Dolma (Lahana Dolması) — Stuffed Cabbage Rolls with Ground Meat

Separate the leaves of 1 small cabbage head. Bring a pot of water to a boil. Layer the cabbage leaves on top of one another and boil one side, then flip and boil the other side. Transfer the boiled cabbage leaves to a tray and let them cool.   

In a bowl, knead together 300 g ground beef, 1 finely diced onion, half a bunch of chopped parsley, half a water glass (about 200 ml / 3/4 cup + 1 tbsp) of picked and washed rice, 1 dessert spoon dried mint, 1 dessert spoon salt, 1 teaspoon black pepper, 1 dessert spoon Aleppo pepper flakes, 1 tablespoon tomato paste (domates salçası), and half a tea glass (about 100 ml / 1/3 cup + 1 tbsp) of water. Wrap the prepared filling in the boiled cabbage leaves. Spread 1 tablespoon of tomato paste over the bottom of the pot you will cook in, then line it with the thick stems of the boiled cabbage leaves. Arrange the dolma on top. Add 2 tablespoons of margarine and enough water to just cover, then sprinkle with 1 teaspoon of salt. Once it comes to a boil, reduce to low heat and cook until done. Enjoy…

Cooking Tip

If you have fresh red tomatoes, you can grate 2 of them onto the bottom of the pot instead of the tomato paste.
