Total time: 1 hr
Prep: 1 hr

Ingredients for Olive Oil Cabbage Rolls (Zeytinyağlı Lahana Sarması)

  • 1 medium head of cabbage
  • 4 dried onions
  • 1 packet pine nuts
  • 2.5 water glasses (about 200 ml / 3/4 cup + 1 tbsp each) rice
  • 2 tablespoons granulated sugar
  • Half a packet of currants
  • Half a water glass water
  • 1 dessert spoon (about 2 tsp) dried mint
  • 1 dessert spoon + 1 teaspoon salt
  • 1 tablespoon olive oil

How to Make Olive Oil Cabbage Rolls (Zeytinyağlı Lahana Sarması)

  1. Separate 1 medium head of cabbage into its leaves. Bring a pot of water to a boil. Stack the cabbage leaves and boil one side, then flip and boil the other side.
  2. In a pot, sauté 4 finely chopped onions and 1 packet of pine nuts with a drizzle of oil. Add 2.5 water glasses of rice and sauté again. Add 2 tablespoons of granulated sugar. Add half a packet of currants (rinsed and soaked in water) and half a water glass of water. Reduce the heat and cook until the water is absorbed. Chop half a bunch of parsley over the top. Add 1 dessert spoon of dried mint and 1 heaping dessert spoon of salt and mix everything together. Place the filling along the bottom edge of each boiled cabbage leaf and roll them up. Line the bottom of the pot with the thick stem pieces torn from the boiled cabbage leaves. Arrange the rolled dolma on top. Add water until it just covers the rolls. Drizzle 1 teaspoon of salt and 1 tablespoon of olive oil over the water. Once it comes to a boil, reduce the heat. Cook until the water is fully absorbed.

About This Recipe

Here are a few short mythological tales about the olive tree. Enjoy;

*When the fury of the Great Flood began to subside, the Prophet Noah wondered whether life had returned to the world. He released a white dove to find out. Unable to find a tree or a piece of dry land to perch on, the dove returned to the ark. The Prophet Noah waited a while longer and released the dove again. This time, the dove returned with a freshly plucked olive branch. The dove and the olive branch were how Noah learned that the Flood had ended. The white dove carrying an olive leaf in its beak has since become a symbol of hope and peace. The olive tree, which withstood the destructive force of the Flood, became a symbol of immortality…

*Adam and Eve were banished from the Garden of Eden. When Adam was 930 years old, he sensed that death was near. He decided to ask God to forgive him and all of humanity, and tasked his son Seth with the mission. He sent Seth to the garden of paradise. There, an angel gave him three seeds from the "tree of good and evil" and told him to place them in his father's mouth before burial. Adam died shortly after and was buried on Mount Tamor. Three trees sprouted from his grave: the Olive, the Cedar, and the Cypress. And so peace was made between God and man.

*The staff of Hermes' caduceus — the symbol of medicine featuring two intertwined snakes — is made from an olive branch. According to legend, the god Hermes thrust his staff into the ground between two fighting snakes to test the power of reconciliation. From that moment on, the snakes stopped fighting, coiled around the staff, and never let go.
