Ingredients for Kısır with Pomegranate Molasses (Kısır)
- 2 water glasses (about 200 ml / 3/4 cup + 1 tbsp each) fine bulgur (cracked wheat) for köfte
- 1 heaping tablespoon red pepper paste (biber salçası)
- 1 tea glass (about 100 ml / 1/3 cup + 1 tbsp) vegetable oil
- 1.5 tablespoons pomegranate molasses
- 3 green onions
- 1 handful parsley
- 1 handful dill
- 1 dessert spoon (about 2 tsp) salt
- 1 dessert spoon (about 2 tsp) Aleppo pepper flakes
- 1 teaspoon dried mint
- 1 red-fleshed radish
- Pickled cucumber
- Small pickled hot peppers
- 1 tomato skin (for garnish)
How to Make Kısır with Pomegranate Molasses (Kısır)
Place 2 water glasses (about 200 ml / 3/4 cup + 1 tbsp each) of fine bulgur (cracked wheat) into a lidded glass bowl. Add hot water until it just covers the bulgur, then close the lid and let it rest until all the water is absorbed. Once the water has been absorbed, add 1 heaping tablespoon of red pepper paste, 1 tea glass (about 100 ml / 1/3 cup + 1 tbsp) of vegetable oil, and 1.5 tablespoons of pomegranate molasses, then mix and blend thoroughly. Finally, add 3 chopped green onions, 1 handful of chopped parsley, 1 handful of dill, 1 dessert spoon of salt, 1 dessert spoon of Aleppo pepper flakes, and 1 teaspoon of dried mint, then stir to combine and transfer to a serving plate. Top with sliced red-fleshed radish, pickled cucumber, and small pickled hot peppers. Shape a rose in the center using the tomato skin. Enjoy…
