Ingredients for Beet Cake
- 3 eggs
- 1.5 water glasses (about 300 ml / 1½ cups) granulated sugar
- 1 water glass (about 200 ml / ¾ cup + 1 tbsp) milk
- 1 water glass (about 200 ml / ¾ cup + 1 tbsp) vegetable oil
- 2 beets
- ½ water glass (about 100 ml / ½ cup) walnuts
- 1 packet baking powder
- 1 packet vanilla
- 1 dessert spoon (about 2 tsp) cinnamon
- 3–3.5 water glasses (about 600–700 ml / 3–3½ cups) flour
How to Make Beet Cake
Peel and wash 2 beets. Cut them into quarters and place in a pot. Add enough water to cover and boil. (They are done when a fork pierces through easily.) Transfer the boiled beets to a food processor and blitz into very fine pieces.

In a bowl, beat 3 eggs and 1.5 water glasses of granulated sugar together. Add 1 water glass of milk, 1 water glass of vegetable oil, the 2 boiled and processed beets, half a water glass of chopped walnuts, 1 packet of baking powder, 1 packet of vanilla, 1 dessert spoon of cinnamon, and as much flour as needed, then beat again.
Pour the prepared batter into a greased cake pan and bake in a preheated oven at 190°C (375°F). Enjoy!
Pro Tips
- Don't make the beet too watery or purée-like. We want air pockets in our cake, but the batter should not be overly wet.
- When beating the granulated sugar with the eggs, wait until the mixture is well aerated — this is what gives the cake its wonderfully soft texture.
- Due to the moisture content of the beets, the cake will have a slightly moist texture.
- If you have a gluten intolerance, you can also try this cake with gluten-free flour.
