Ingredients for Damson Plum Cake
- 3 eggs
- 1 water glass (about 200 ml / 3/4 cup + 1 tbsp) + 1 tablespoon powdered sugar
- 5 tablespoons butter
- 4 tablespoons yogurt
- 1 packet vanilla
- 1 medium lemon, zested
- 1 packet baking powder
- 3 water glasses (about 200 ml / 3/4 cup + 1 tbsp each) flour
- 5 walnuts, crushed
- 1 teaspoon cinnamon
- 8 medium damson plums
How to Make Damson Plum Cake
In a bowl, beat 3 eggs and 1 water glass (about 200 ml / 3/4 cup + 1 tbsp) of powdered sugar until smooth. Melt 5 tablespoons of butter and add it in. Beat for another 2–3 minutes. Add 4 tablespoons of yogurt and 1 packet of vanilla, and continue mixing until you achieve a smooth, creamy consistency. Add 3 water glasses of flour, 1 packet of baking powder, the zest of 1 lemon, and 1 teaspoon of cinnamon, then beat again. Transfer the batter to a greased and lightly floured cake pan and smooth the top with a spatula.
In a bowl, halve the damson plums, remove the pits, and slice them thinly. Add 5 crushed walnuts, 1 tablespoon of powdered sugar, and 1 tablespoon of flour, and toss everything together.
Scatter this mixture over the top of the cake batter. Bake in a preheated oven at 170°C (340°F) for about 45–50 minutes.
