Ingredients for Stuffed Potatoes (Patates Dolması)
- 300 g (about 10.5 oz) ground beef,
- 1 onion
- 3 handfuls rice
- 1 heaping tablespoon + 1 dessert spoon (about 2 tsp) tomato paste (domates salçası)
- 2 handfuls parsley
- 1 pinch dried mint
- 1 teaspoon black pepper
- 1.5 dessert spoons (about 1 tbsp) salt
- Half a tea glass (about 50 ml / 3 tbsp + 1 tsp) water
- 5 potatoes
- 1 tablespoon margarine
How to Make Stuffed Potatoes (Patates Dolması)
In a large bowl, combine 300 g of ground beef, 1 onion finely diced, 3 handfuls of rinsed and picked rice, 1 heaping tablespoon of tomato paste (domates salçası), 2 handfuls of chopped parsley, 1 pinch of dried mint and black pepper, 1 dessert spoon (about 2 tsp) of salt, and half a tea glass (about 50 ml / 3 tbsp + 1 tsp) of water. Mix everything together until well combined.
Peel and wash 5 potatoes, then cut them in half lengthwise. Trim a thin slice off the bottom of each half so they sit flat in the pot. Hollow out the centers and fill each one with the prepared ground meat mixture.
Spread 1 dessert spoon (about 2 tsp) of tomato paste across the bottom of the pot, then arrange the stuffed potatoes snugly so they won't tip over. Place 1 tablespoon of margarine between the potatoes. Add water to reach halfway up the potatoes, add a pinch of salt to the water, and cook until the potatoes are tender. You can serve with yogurt if you like. Enjoy!
About This Recipe
The story of the potato begins with its harvest by the Incas in what is now Chile and Peru, around 1400 BC. It spread to Europe during the Thirty Years' War (1618–1648).
Potatoes are one of the most fiber-rich foods around. Beyond fiber, they are packed with vitamins C and B6. Recent studies have also shown that potatoes are a source of nitric acid and zinc. It is also known that they may help reduce the risk of breast cancer in women, and by purifying the blood of toxins from environmental pollutants such as air pollution and radiation, they support cell renewal. Potatoes also strengthen the immune system and help alkalize the blood. Thanks to their phosphorus content, potatoes are said to boost male vitality — not our claim, but that of health experts. The manganese found in potatoes is also a friend to women's skin. This remarkable vegetable can beautify and firm the skin not only when eaten, but also through creams and masks.
It's hard to think of a dish that doesn't suit potatoes — from hearty stews to sautés, fries, oven-baked dishes, and salads, they show up in every delicious form imaginable.
