Ingredients for Savory Potato Cupcakes

  • 2 eggs
  • 1 water glass of yogurt (about 200 ml / 3/4 cup + 1 tbsp)
  • 1 water glass of vegetable oil (about 200 ml / 3/4 cup + 1 tbsp)
  • Flour, as much as needed
  • 1 teaspoon baking powder
  • 1 dessert spoon (about 2 tsp) salt
  • 2 potatoes

How to Make Savory Potato Cupcakes

In a bowl, beat 2 eggs and 1 water glass of yogurt together. Add 1 water glass of vegetable oil, enough flour to achieve a cupcake batter consistency, 1 teaspoon of baking powder, 1 dessert spoon of salt, and 2 potatoes cut into small cubes. Mix together with a spoon. Pour the batter into greased cupcake molds and bake in a preheated oven at 190°C (375°F).

The potato is such an ancient plant that it was first harvested as far back as 1400 BC. In the 1500s, Spanish explorers brought potatoes back to Europe from their voyages to the Americas and called them "patata." During a period when famine had reached its peak and people were dying of hunger, France's King Louis XVI and Queen Marie Antoinette joined a campaign to encourage potato consumption. The king had potatoes planted on a 50-hectare military plot and placed guards around the field as if something incredibly valuable were being grown — which naturally aroused great public curiosity. That, of course, was exactly his intention. Queen Marie Antoinette even managed to make potatoes fashionable by wearing their flowers as hair decorations.

Sailors on voyages of discovery grew very fond of potatoes, as they were both filling and rich in vitamins that helped protect against illness. Potatoes were not immediately accepted in Europe, one of the main reasons being that they were not mentioned in the Bible. Christians refused to grow potatoes, and so for a long time the potato was declared the food of the devil. In addition, the Scots in particular neither grew nor ate potatoes. Even today, there are still some regions where potatoes are avoided for this very reason.

The potato is a food that is very easy to grow but difficult to store — it should be kept at temperatures above 4°C (39°F), otherwise the starch inside converts to sugar and the flavor changes. Consisting of 75% water, the potato is known to be beneficial for high blood pressure and heart conditions thanks to its high potassium content and low sodium levels. It is also a wonderful antioxidant.
