About This Recipe

Cheeses made in Europe tend to be less salty because they are produced in cooler climates. However, in hotter regions, cheeses are made very sour and salty to prevent them from being exposed to high temperatures. The United States is the world's largest cheese-producing country. Even though the US produces the most cheese, when it comes to consumption, Greece and France rank among the countries with the highest per capita cheese consumption — an average of about 25 kg (55 lbs) per person per year. Looking year by year, this figure is 14 kg (31 lbs) in the United States, and about 6 kg (13 lbs) per person per year in Turkey.

The history of cheese dates back to 8000 BC. In other words, cheese is a food that is as old as the history of humanity itself. Although there is no definitive historical data, estimates place its origins around 8000–9000 BC, coinciding with the domestication of sheep. It is believed that the first cheese was made by the people of the Middle East and nomadic Turks of Central Asia. The word "peynir" (cheese) is of Turkish origin and first appeared in Mamluk Turkish as "benir," "penir," and "beynir." Its oldest known written equivalent in pure Turkish appears in the book Dīwānu Lughāti't-Türk, written by Kaşgarlı Mahmut.

Did you also think that cheese is made only and exclusively from cow's, sheep's, or goat's milk? Then let us share a secret with you: cheese can be — and is today — produced from any milk-bearing animal. A farm in Sweden makes reindeer cheese. Reindeer have very short milk-secretion periods. Just 3 reindeer on this farm yield a total of 300 kg (660 lbs) of cheese per year. The price per kilogram is jaw-dropping — a full $1,000 per kilo. It is known as the most expensive cheese in the world.
