Ingredients for Chicken Rice Pilaf (Tavuklu İç Pilav)
3 water glasses (about 200 ml / 3/4 cup + 1 tbsp each) rice
Half a package of currants
2 chicken breasts
2 onions
1 package of pine nuts
2 tablespoons butter
1 tea glass (about 100 ml / 1/3 cup + 1 tbsp) vegetable oil
1 water glass water
1 dessert spoon (about 2 tsp) salt
1 dessert spoon (about 2 tsp) granulated sugar
How to Make Chicken Rice Pilaf (Tavuklu İç Pilav)
Sort and rinse 3 water glasses of rice, then soak in hot water. Separately, rinse half a package of currants and soak in hot water in another bowl.
Rinse 2 chicken breasts, place in a pot, cover with water, and boil until cooked through. Transfer the boiled chicken to a plate and shred it.
In a pilaf pot, sauté 2 diced onions, 1 package of pine nuts, 2 tablespoons of butter, and 1 tea glass of vegetable oil. Add 2 water glasses of the reserved chicken broth and 1 water glass of water. Sprinkle in 1 dessert spoon of salt and 1 dessert spoon of granulated sugar, then add the shredded chicken. Once the liquid comes to a boil, add the soaked rice and currants. When it returns to a boil, reduce the heat and let it steep until absorbed. Once rested, sprinkle with black pepper and stir to combine.
