Ingredients for Pan-Fried Kokoreç (Turkish Offal)

  • 500 g (about 1 lb) kokoreç (Turkish offal wrap)
  • 1 tablespoon vegetable oil
  • 2 tomatoes
  • 5 long green peppers (sivri biber)
  • 1 dessert spoon (about 2 tsp) oregano
  • 1 teaspoon Aleppo pepper flakes
  • 1 dessert spoon (about 2 tsp) salt

How to Make Pan-Fried Kokoreç (Turkish Offal)

Take 500 g (about 1 lb) of cleaned kokoreç, cut into rounds. Cook slowly in a preheated pan for 5–6 minutes. Once cooked, set the kokoreç aside and chop it into small pieces on a cutting board using a large knife.

Add 1 tablespoon of vegetable oil to the pan and turn on the heat. Add 2 diced tomatoes and 5 long green peppers. Once the tomatoes and peppers are cooked and have released their liquid, add the kokoreç back in and sauté for a little longer. Add 1 dessert spoon (about 2 tsp) of oregano, 1 teaspoon of Aleppo pepper flakes, and 1 dessert spoon (about 2 tsp) of salt, then remove from heat.
