- 1 onion
- 1 red pepper
- ½ tea glass (about 50 ml / 3 tbsp + 1 tsp) vegetable oil
- 1 tablespoon salça (Turkish tomato/pepper paste)
- 4 zucchini
- ½ tea glass (about 50 ml / 3 tbsp + 1 tsp) rice
- 1 handful parsley
- 1 handful fresh mint
- 1 dessert spoon (about 2 tsp) salt
- 1 handful dill
- ½ teaspoon black pepper
- 1 teaspoon Aleppo pepper flakes
How to Make Zucchini Stew (Kabak Yemeği)
In a pot, sauté the finely diced onion and 1 julienned red pepper in half a tea glass of vegetable oil. Add 1 tablespoon of salça and stir. Add 4 trimmed, washed, and cubed zucchini and half a tea glass of washed and picked rice. Reduce the heat, cover with a lid, and wait for them to lightly color. Once they have turned golden, add water just until it covers the ingredients, then chop 1 handful of parsley. Add 1 handful of fresh mint, 1 dessert spoon of salt, 1 handful of dill, half a teaspoon of black pepper, and 1 teaspoon of Aleppo pepper flakes, then stir to combine.
