How to Make Kadınbudu Köfte (Turkish Lady's Thigh Meatballs)
Divide 500 g (about 1 lb) of ground meat into two equal portions. In a pan, sauté the finely chopped onion with ½ tea glass of vegetable oil (about 50 ml / 3 tbsp + 1 tsp). Add one portion of the ground meat to the pan and sauté together with the onion, then remove from heat.
Place the remaining portion of ground meat in a bowl. Add 1 tea glass of boiled rice (about 100 ml / ⅓ cup + 1 tbsp), ½ dessert spoon of salt (about 1 tsp), 1 teaspoon of black pepper, and 1 egg. Add the sautéed ground meat on top and knead everything together. Take about half a handful of the mixture, shape it into an oval köfte. Coat the prepared köfte in flour, then dip into 2 beaten eggs, and fry in oil.
