Pideli Köfte (Turkish Meatballs on Pide Bread)

Ingredients for Pideli Köfte (Turkish Meatballs on Pide Bread)

  • 500 g (about 1 lb) ground meat
  • 1 onion
  • 1 handful parsley
  • 1 egg
  • 4 slices soaked bread (crumb only)
  • 1/2 dessert spoon (about 1 tsp) salt
  • 1 teaspoon black pepper
  • For the sauce: 2 tablespoons butter
  • 2 tablespoons salça (Turkish tomato/pepper paste)
  • 1/2 water glass (about 200 ml / 3/4 cup + 1 tbsp) water
  • 1/2 dessert spoon (about 1 tsp) salt
  • 1/2 teaspoon black pepper
  • 1 bowl strained yogurt
  • 1 clove garlic
  • 1 tırnak pide (finger-marked Turkish flatbread)

How to Make Pideli Köfte (Turkish Meatballs on Pide Bread)

Grate 1 onion into 500 g (about 1 lb) of ground meat and chop 1 handful of parsley. Add 1 egg, 4 slices of soaked bread (crumb only), 1/2 dessert spoon (about 1 tsp) of salt, and 1 teaspoon of black pepper, then knead together. Shape the mixture into round köfte (Turkish meatballs) by hand. Fry in hot oil until cooked through.

For the sauce: In a small saucepan, sauté 2 tablespoons of butter and 2 tablespoons of salça (Turkish tomato/pepper paste). Add 1/2 water glass (about 3/4 cup + 1 tbsp) of water and bring to a boil. Stir in 1/2 dessert spoon of salt and 1/2 teaspoon of black pepper, then remove from heat.

Mix 1 clove of crushed garlic into a bowl of strained yogurt and stir to combine.

Cut a tırnak pide (finger-marked Turkish flatbread) into squares, place on a baking tray, and warm in the oven. Transfer the warmed pide pieces to a serving plate and arrange the köfte on top. Pour the garlic yogurt over them, and finally drizzle the salça sauce over everything. Enjoy!
