Ingredients for Buckwheat Pilaf (Karabuğday Pilavı)

  • 2 water glasses (about 200 ml / 3/4 cup + 1 tbsp each) buckwheat
  • 1 onion
  • 3 long green peppers
  • 1 red bell pepper
  • 6 garlic cloves
  • 1 tablespoon butter
  • 2 tablespoons vegetable oil
  • 2 tablespoons salça (Turkish tomato paste)

How to Make Buckwheat Pilaf (Karabuğday Pilavı)

Pick over and rinse 2 water glasses of buckwheat. Dice 1 onion, 3 long green peppers, 1 red bell pepper, and 6 garlic cloves into a pilaf pot and sauté with 1 tablespoon of butter and 2 tablespoons of vegetable oil. Add the buckwheat and stir for a few minutes. Add 2 tablespoons of salça (Turkish tomato paste) and stir again. Add water until it just covers the mixture. Once it comes to a boil, reduce the heat and let it cook on low.
