Ingredients for Dried Eggplant and Pepper Dolma (Kuru Patlıcan ve Biber Dolması)
- 12 dried eggplants
- 4 dried peppers
- 2 tablespoons red pepper paste (biber salçası)
- Juice of half a lemon
- 2 garlic cloves
- 1 teaspoon tomato/pepper paste (salça)
- 300 g (about 10.5 oz) ground meat
- Half a water glass (about 200 ml / 3/4 cup + 1 tbsp) rice
- 1 onion
- Half a tea glass (about 100 ml / 1/3 cup + 1 tbsp) water
- 1 dessert spoon (about 2 tsp) salt
- Half a teaspoon black pepper
- 1 dessert spoon (about 2 tsp) hot Aleppo pepper flakes
- 2 tablespoons butter
How to Make Dried Eggplant and Pepper Dolma (Kuru Patlıcan ve Biber Dolması)
Place 12 dried eggplants and 4 dried peppers in a pot, add hot water until fully submerged, and boil for 5 minutes. Once boiled, drain and rinse under cold water.
In a bowl, mix 1 tablespoon of red pepper paste, the juice of half a lemon, 2 finely chopped garlic cloves, and 1 teaspoon of water to thin the paste.
In a separate bowl, combine 300 g (about 10.5 oz) of ground meat, half a water glass (about 3/4 cup + 1 tbsp) of picked and rinsed rice, 1 grated onion, 1 tablespoon of red pepper paste, half a tea glass (about 1/3 cup + 1 tbsp) of water, 1 dessert spoon (about 2 tsp) of salt, half a teaspoon of black pepper, and 1 dessert spoon of hot Aleppo pepper flakes, and knead together. Fill the eggplants and peppers with this mixture and arrange them in the pot. Add 2 tablespoons of butter and the prepared lemon water on top. Finally, add just enough water to reach the level of the dolma, bring to a boil, then reduce the heat and cook for 20–25 minutes. Drizzle with olive oil before serving.
