Ingredients for Puff Pastry and Yufka Börek (Savory Layered Pastry) with Soda

  • 100 g kaşar cheese (Turkish semi-hard cheese, similar to mild cheddar)
  • 100 g white cheese (similar to feta)
  • 1 handful parsley
  • Half a water glass (about 200 ml / 3/4 cup + 1 tbsp) milk
  • 1 egg
  • 1 bottle soda water
  • 3 tablespoons butter
  • 12 sheets puff pastry dough
  • 2 sheets yufka (thin Turkish phyllo-like dough)

How to Make Puff Pastry and Yufka Börek (Savory Layered Pastry) with Soda

In a bowl, mix 100 g kaşar cheese, 100 g white cheese, and a handful of chopped parsley together.

In a separate bowl, mix half a water glass (about 200 ml / 3/4 cup + 1 tbsp) of milk, 1 egg, 1 bottle of soda water, and 3 tablespoons of melted butter together.

Grease the bottom of a square glass dish or baking tray with vegetable oil. Form the bottom layer by laying puff pastry sheets to cover the base. Tear 1 sheet of yufka (thin Turkish phyllo-like dough) over the top and pour the prepared cheese filling over it. Tear another sheet of yufka on top, then close with puff pastry sheets and cut into slices. Pour the milk sauce you prepared over the top. Bake in a 180°C (350°F) oven until puffed and golden.
