Ingredients for Two-Cheese Puff Pastry Börek (Milföy Böreği)

  • 100 g white cheese (similar to feta)
  • 100 g shredded kaşar cheese (Turkish semi-hard cheese, similar to mild cheddar)
  • 11 sheets square puff pastry dough
  • 1 egg yolk
  • Nigella seeds
  • Sesame seeds

How to Make Two-Cheese Puff Pastry Börek (Milföy Böreği)

In a bowl, mix 100 g of crumbled white cheese and 100 g of shredded kaşar cheese together.

Lay out 11 square puff pastry sheets on the counter. Place the prepared filling in the center of each. Fold the top and bottom edges over to form a square, then close the side edges as well. Flip each parcel seam-side down and arrange on a baking tray lined with parchment paper. Brush with 1 egg yolk, then sprinkle some with nigella seeds and others with sesame seeds. Bake in a preheated oven at 190°C (375°F) until golden brown.
