How to Make Healing Vegetable Soup
In a pot, finely chop 1 onion, 2 celery stalks, 2 leeks, and 2 carrots and sauté them in oil. Add 2 zucchini cut into cubes, season with salt and black pepper, and sauté again. Add water until the vegetables are just covered and cook until tender. Blend all the cooked ingredients directly in the pot using an immersion blender.
