- 1 tablespoon vegetable oil
- 2 celeriac roots
- 1 carrot
- 1/2 dessert spoon (about 1 tsp) salt
- 1 egg
- 1/2 lemon
How to Make Celeriac Soup
Fill a soup pot with enough water to avoid overflow and add 1 tablespoon of vegetable oil. Once it comes to a boil, add 2 celeriac roots cut into cubes and 1 carrot finely chopped. Add 1/2 dessert spoon (about 1 tsp) of salt. When the carrots are cooked through, whisk 1 egg and the juice of half a lemon together in a bowl. Ladle some of the hot soup broth into the bowl to temper the mixture. Then stir it back into the soup, mixing continuously. After it comes to a boil, cook for another 5 minutes and remove from heat.
