Wash 1 kg (about 2.2 lb) of sour cherries and place them in a pot. Pour 1 kg (about 2.2 lb) of granulated sugar over them. Let the mixture sit for one full day. The next day, place the pot on the stove and bring to a boil, then reduce the heat. Once the jam begins to thicken and reach a jam-like consistency, squeeze in 1 lemon. Boil for 5 more minutes, then remove from heat.
Cooking Tip
If you pit the sour cherries, the jam will become too watery. We recommend making the jam with the pits left in.
