How to Make Celeriac Salad with Mayonnaise and Yogurt

  1. Peel the outer skin of 2 medium celeriac.

  2. Grate the peeled celeriac into a bowl.

  3. Sprinkle ½ dessert spoon of salt over the top.

  4. Add 6 tablespoons of mayonnaise, then 1 bowl of yogurt.

  5. Mix everything together well. Transfer the celeriac salad to a serving plate and spread it out evenly.

  6. Scatter walnuts over the top, then refrigerate to chill before serving.

  7. Serve cold.

Tips

  • Celeriac browns fast. Peel and grate it right before you need it, and use it immediately. If there's any gap, toss it with a squeeze of lemon juice — you can even hold the grated celeriac in a bowl of cold water with lemon juice until you're ready.

  • Strained yogurt keeps the salad from watering down. If you're using regular homemade yogurt, drain it through a cheesecloth first. Adjust the amount of mayonnaise to your taste.

  • Add the walnuts just before serving rather than mixing them in — they'll stay crisp and won't darken.

  • Chill the finished salad in the fridge for at least 30 minutes; the flavors come together much better once cold.

  • If you like, stir in some grated green apple, a crushed garlic clove, or finely chopped dill.
