Ingredients for Bow-Tie Börek (Turkish Savory Pastry)
- 2 sheets yufka (thin Turkish phyllo-like dough)
- 1 egg yolk
- Half a tea glass (about 50 ml / 3 tbsp) vegetable oil
- 200 g white cheese (similar to feta)
- 1 handful parsley
How to Make Bow-Tie Börek (Turkish Savory Pastry)
Lay 1 sheet of yufka flat on the counter in its entirety. Cut it into a square shape, leaving about 1 finger-width of space around the edges. Set the trimmed yufka pieces aside. Cut the square yufka on the counter in half lengthwise and widthwise to obtain 4 smaller squares. Place the prepared filling (white cheese and parsley mixture) in the center of each yufka square. Fold all four sides of the yufka over the filling to close it. Flip the prepared yufka parcel upside down. From the trimmed yufka pieces set aside, cut a long strip. Fold it in half and gather it around the center of the yufka parcel, cinching it to form a bow-tie shape. Brush the prepared bow-tie börek pieces with a little vegetable oil. Brush the bow-tie knot sections (the center part) with egg yolk and sprinkle with nigella seeds. Bake in a preheated oven at 180°C (350°F) for about 20–25 minutes.
