4 sheets yufka (thin Turkish phyllo-like dough)
2 eggs
2 water glasses milk (about 200 ml / 3/4 cup + 1 tbsp each)
1/2 tea glass vegetable oil (about 100 ml / 1/3 cup + 1 tbsp)
200 g white cheese (similar to feta)
1 handful parsley
How to Make Büzgülü Börek (Gathered Phyllo Börek)
In a bowl, beat 2 eggs. Add 2 water glasses of milk and 1/2 tea glass of vegetable oil, then stir to combine.
In a separate bowl, crumble 200 g (about 7 oz) white cheese and mix it together with 1 handful of finely chopped parsley.
Lay one sheet of yufka flat on the counter and drizzle some of the egg-milk mixture over it. Scatter the parsley and cheese filling across the surface. Gather and scrunch both the top and bottom edges toward the center, then place into a greased baking tray or glass baking dish. Repeat this process for all 4 sheets of yufka. Drizzle the remaining sauce over the top. Bake in a preheated oven at 200°C (390°F) until deep golden and crisp.
