Ingredients for Celeriac Salad with Mayonnaise and Yogurt
- 2 medium celeriac
- 6 tablespoons mayonnaise
- 1 bowl yogurt
- ½ dessert spoon (about 1 tsp) salt
- For topping: walnuts
How to Make Celeriac Salad with Mayonnaise and Yogurt
Peel the outer skin of 2 medium celeriac.
Grate the peeled celeriac into a bowl.
Sprinkle ½ dessert spoon of salt over the top.
Add 6 tablespoons of mayonnaise, then 1 bowl of yogurt.
Mix everything together well. Transfer the celeriac salad to a serving plate and spread it out evenly.

Scatter walnuts over the top, then refrigerate to chill before serving.
Serve cold.

Tips
Celeriac browns fast. Peel and grate it right before you need it, and use it immediately. If there's any gap, toss it with a squeeze of lemon juice — you can even hold the grated celeriac in a bowl of cold water with lemon juice until you're ready.
Strained yogurt keeps the salad from watering down. If you're using regular homemade yogurt, drain it through a cheesecloth first. Adjust the amount of mayonnaise to your taste.
Add the walnuts just before serving rather than mixing them in — they'll stay crisp and won't darken.
Chill the finished salad in the fridge for at least 30 minutes; the flavors come together much better once cold.
If you like, stir in some grated green apple, a crushed garlic clove, or finely chopped dill.
