Ingredients for Mixed Pickles (Karışık Turşu)
- 4 kg (about 8.8 lb) pickle jar
- Rock salt
- 1 water glass (about 200 ml / 3/4 cup + 1 tbsp) grape vinegar
- 5 dessert spoons (about 2 tsp each) citric acid powder
- 1 dessert spoon (about 2 tsp) granulated sugar
- 1 handful chickpeas
- 12 garlic cloves
- Cucumber
- Carrot
- Cabbage
How to Make Mixed Pickles (Karışık Turşu)
Fill the 4 kg (about 8.8 lb) pickle jar with water, then pour the water into a separate container. Add rock salt to the water, making sure it is not overly salty. Add 1 water glass (about 200 ml / 3/4 cup + 1 tbsp) of grape vinegar, 5 dessert spoons of citric acid powder, and 1 dessert spoon of granulated sugar, and stir until dissolved. Place 1 handful of chickpeas, 6 peeled garlic cloves, washed and chopped tomatoes, cucumbers pierced with holes, chopped carrots, long green peppers, and chopped cabbage in layers at the bottom of the jar. (You can add any pickle ingredients you like.) Place the remaining 6 peeled garlic cloves on top, then fill with the prepared brine until it covers everything. Close the lid and wait 15–20 days.
