Ingredients for Pickled Long Green Peppers (Biber Turşusu)

  • Long green peppers (enough to fill your pickling jar)
  • Rock salt
  • 1/2 water glass of grape vinegar (about 200 ml / 3/4 cup + 1 tbsp)
  • 3 dessert spoons citric acid powder (about 2 tsp each)
  • 1 dessert spoon granulated sugar (about 2 tsp)
  • 1 handful chickpeas
  • 10 cloves garlic

How to Make Pickled Long Green Peppers (Biber Turşusu)

Take enough long green peppers to fill the jar or container you will be using for pickling. Fill the jar with water, then pour the water into a separate bowl. Add rock salt to the water — enough to make it salty but not overly so. Add 1/2 water glass of grape vinegar (about 200 ml / 3/4 cup + 1 tbsp), 3 dessert spoons of citric acid powder, and 1 dessert spoon of sugar, then stir until dissolved. Place 1 handful of chickpeas, 5 peeled garlic cloves, and the peppers — washed and slit at the base — into the bottom of the jar. Add another 5 peeled garlic cloves on top. Pour the prepared brine over everything until it reaches the top. Seal the jar and wait 15–20 days. Enjoy!
