Ingredients for Pickled Cabbage (Lahana Turşusu)
- 1 medium head white cabbage
- 1/2 water glass (about 200 ml / 3/4 cup + 1 tbsp) grape vinegar
- 3 dessert spoons (about 2 tsp each) citric acid (lemon salt)
- 2 tablespoons non-heaping pickling salt (rock salt)
- 1 dessert spoon (about 2 tsp) sugar
- 1 handful chickpeas
- 10 cloves garlic
How to Make Pickled Cabbage (Lahana Turşusu)
Fill the jar with drinking water, then pour the water into a separate container. Add 2 tablespoons of non-heaping pickling salt (rock salt) to the water, making sure it is not overly salty. Add 1/2 water glass (about 200 ml / 3/4 cup + 1 tbsp) grape vinegar, 3 dessert spoons citric acid (lemon salt), and 1 dessert spoon granulated sugar, then stir until dissolved. Place 1 handful of chickpeas, 5 peeled garlic cloves, and coarsely chopped cabbage at the bottom of the jar. Add 5 more peeled garlic cloves on top. Pour the prepared brine until it covers everything. Close the lid and wait 15–20 days for the pickled cabbage to ferment. Enjoy!
