About This Recipe

The potato has been a vitamin powerhouse for people for over 8,000 years — it fueled the industrialization and growth of the European continent, yet also brought devastation to Ireland. In other words, it fed and saved a continent while wiping out a nation through famine. Of course, the culprit behind that catastrophe was not the potato itself, but a fungus called Phytophthora infestans.

We cannot pass over this terrifying story. Between 1845 and 1851 in Ireland, a blight swept through the potato crops. At the time, Ireland's population was around eight million, and roughly half of them depended on the potato as their staple food. In 1845, a toxic microscopic fungus that arrived from America destroyed one-third of the potato harvest. The famine reached its peak in 1847. It was so devastating that modern historians estimate that 2.5 million people in Ireland died of starvation during that period.

In Ireland today, the potato is still a deeply respected food despite everything. In rural areas, farmers raising a glass to one another still make this toast: "Good health and a long life to you, a potato field without rent, and a child every year."

Containing four times more carbohydrates than grains and similar foods, the potato remains one of the most nutritious foods available, and we prepare it in countless delicious ways in our kitchens. We are proud to share our classic Potato Salad recipe. As we said, today's dish is a true classic — but do also try our famous Green Apple Potato Salad recipe sometime.
