Ingredients for Corn and Potato Salad (Mısırlı Patates Salatası)

  • 5 large potatoes
  • 5 green onions
  • Half a water glass (about 200 ml / 3/4 cup + 1 tbsp) boiled corn
  • 1 handful parsley
  • 1 lemon
  • 1 tea glass (about 100 ml / 1/3 cup + 1 tbsp) vegetable oil
  • 1 dessert spoon (about 2 tsp) salt

How to Make Corn and Potato Salad (Mısırlı Patates Salatası)

We shuck 3 whole ears of corn from their cobs and wash them. We place the washed corn in a pressure cooker and add water until it is submerged. We close the lid. Once steam begins to release, we lower the heat and boil for 1 hour. (If you don't want to bother boiling just 3 ears of corn, you can boil a larger batch — once cooled, strip the kernels off the cob, store them in a freezer bag, and use as needed.)

In a bowl, we dice 5 large boiled potatoes and 5 green onions into cubes. We add half a water glass of boiled corn and chop 1 handful of parsley over the top. We squeeze 1 lemon over it and pour in 1 tea glass of vegetable oil. We add 1 dessert spoon of salt and mix everything together. Enjoy…

* If you have leftover boiled corn, once cooled you can strip the kernels, store them in a freezer bag, and use whenever needed.

Cooking Tip

If it's not summer, you can also make this recipe using frozen or canned corn. However, nothing will quite match the flavor of corn that has been freshly boiled and stripped from the cob in summer — just a heads up. If you like, you can boil fresh summer corn in bulk, strip the kernels once cooled, store them in freezer bags, and use them as needed throughout the year.
