- 2 water glasses (about 200 ml / 3/4 cup + 1 tbsp each) rice
- 3 eggplants
- 1 large onion
- 1 tea glass (about 100 ml / 1/3 cup + 1 tbsp) vegetable oil
- 2 tablespoons butter
- 2 sugar cubes
- 1 tomato
- 1 dessert spoon (about 2 tsp) salt
- 1 teaspoon black pepper
- 3 water glasses water
How to Make Eggplant Pilaf (Patlıcanlı Pilav)

Pick over and rinse 2 water glasses of rice, then soak in hot water.

Peel 3 eggplants in a striped (zebra) pattern, cut them in half lengthwise, and soak in a bowl of salted water.
- In a pilaf pot, sauté 1 large onion (diced for cooking) in 1 tea glass of vegetable oil and 2 tablespoons of butter. Squeeze the eggplants dry, dice them into cubes, and add them to the pot along with 2 sugar cubes; sauté together. Add 1 tomato (diced), 1 dessert spoon of salt, and 1 teaspoon of black pepper. Once the tomatoes are cooked through, add 3 water glasses of water; when it comes to a boil, add the rice. Bring back to a boil, then cook on low heat.
